These muffins offer a quick on-the-go nutrition solution for adults and children alike.  4 XL Eggs
 250 ml cooked Golden Delight Thai rice
 200 ml grated cheese
 625 ml chopped spring onions
 125 ml chopped smoked chicken
 175 g grated zucchini / baby marrow
 30 ml chopped pepper dews
 125 ml gluten free flour
 Salt and pepper to taste

Preheat the oven to 180C.

Whisk the eggs.

Add the remaining ingredients, mix well.

Spoon into a greased muffin tray.

Bake for 20-25mins.
