Muffins are a popular on-the-go snack or meal but are often loaded with refined carbohydrates and not much else, while savoury options aren’t always popular, especially for kids. These sweet muffins are a nice middle ground, offering some sweetness but with added benefits of cooled cooked rice (lowered GI), antioxidant-rich berries, and protein from nuts, eggs, and almond flour, all in a lowered GI formulation (compared to standard muffins) to get your day started and keep you fuller for longer.

 250 ml Golden Delight Thai or Basmati rice
 2.50 ml grated lemon zest
 1 XL egg
 30 ml sugar
 1 l milk
 125 ml flour
 125 ml caramel treat
 80 ml chocolate chips
 Panko crumbs
 Oil for shallow frying

Place the rice and milk in a pot and bring to a boil. Simmer until the rice is al dente.

Add the sugar and lemon peel and allow to thicken, then add the egg, stirring well.

When almost cool, stir in the flour. Take a spoonful of the rice mixture in your hand and place ½ a teaspoon caramel treat and 2 chocolate chips in the center.

Carefully close the rice around the filling and roll to form a ball. It is easier to work with lightly floured hands. Roll each ball in panko crumbs and place on a tray. Chill the balls well before frying in shallow oil until golden.

Tip: You can add cocoa powder to your rice mixture to make chocolate arancini balls, and can switch out your fillings, using things like coconut, white chocolate, raspberry jam, etc. It is easier to work with the mixture when it is cooler.
