This dish is a nice way of incorporating fruit into a dessert for sweetness as well as vitamins, minerals, and fibre. The milk provides protein, fats, and carbohydrates, whilst the cooled cooked rice has a higher resistant starch lowering the GI of this dessert. The coconut also provides fibre and MCT fats. Coconut is, however, high in energy and saturated fat and should therefore be enjoyed in moderation, as should all sweet desserts.

In a medium sized saucepan, simmer the rice, milk, coconut milk, sugar and salt over medium heat for about 40 minutes, or until thickened. Once rice mixture has thickened, remove from heat and let cool for 30 minutes before serving. To make the mango puree, simmer 3 cups diced mango (1 cup reserved for decorating) with the ½ cup brown sugar and 1 cup cream for 3 minutes. Blend until smooth. To Assemble: Start by sprinkling a bit of toasted coconut at the bottom of 4 glasses, then mango puree, then coconut rice. Repeat. Top with a swirl of mango puree, then diced mango and toasted coconut shavings. Serve at room temperature or cold.
Tip: If fresh mango is unavailable, use frozen or tinned mango. You can also add some cubed pineapple to the mix. You can swop the mango out for raspberries or blueberries as well.
