Much lower in sugar, this ice cream alternative makes for a summer sweet treat with a bit more. With cooled cooked rice, it offers longer lasting energy, and the water and milk offer rehydration during those hot days. Chocolate milk is a popular recovery drink after exercise due to its ratio of carbohydrates and protein, with the
chocolate and milk in these pops they too could be enjoyed to replenish and recover post-exercise.

Place the rice, water, evaporated milk, cocoa powder and sugar in a pot. Cover with a lid and bring to a simmer.
Once it starts to simmer, stir occasionally, until the rice is tender, about 20-25 minutes.
Once the rice is fully cooked remove from the heat and stir in the chocolate and salt.
Carefully spoon into Ice pop moulds and freeze overnight.
Unmould and drizzle with chocolate before serving and sprinkle with coloured balls.
Tip: Smaller ice lollies can be made in plastic shot or tot glasses as summer treats, and you can add chopped fruit into the rice mix for added flavour. Fruit juice can also be added to the mix that the rice is cooked in for additional flavour.
