This baked dish provides a nice combination of lean protein; carbohydrates from rice and corn; fats from cheese, milk, and oil; as well as a variety of vegetables, making it a relatively complete meal as is. Preheat the oven to 170C. Place the oil, onion and cubed chicken in a pan and simmer until the chicken is sealed.
Place ½ of the cheese and all the ingredients, including the chicken and onion in a bowl, and mix well. Spray individual dishes or a large casserole dish with spray and cook, empty the mixture in the dish. Sprinkle the top with cheese and bake for 30 minutes.
