This baked dish provides a nice combination of lean protein; carbohydrates from rice and corn; fats from cheese, milk, and oil; as well as a variety of vegetables, making it a relatively complete meal as is. A family fried dish as it’s relatively low in spice and boasts most well-received ingredients. Serve in a bowl on its own for ease of eating, or pair with a side salad.

 30 ml oil
 6 skinless boneless chicken breasts, cut in cubes
 ½ onion, chopped
 500 ml steamed cubed butternut
 375 ml Golden Delight rice
 375 ml frozen corn
 6 baby marrows, grated
 5 ml black pepper
 5 ml mixed herbs
 10 ml salt
 500 ml grated cheddar
 375 ml water
 375 ml milk
 45 ml white onion soup powder

Preheat the oven to 170C. Place the oil, onion and cubed chicken in a pan and simmer until the chicken is sealed.

Place ½ of the cheese and all the ingredients, including the chicken and onion in a bowl, and mix well. Spray individual dishes or a large casserole dish with spray and cook, empty the mixture in the dish. Sprinkle the top with cheese and bake for 30 minutes.

Tip: Serve with salad or crispy garlic bread. You can use any combination of vegetables that the family enjoy. This is a great dish to get kids to eat vegetables, as you can disguise them.
